I need help with some cheeses and ways to serve them?

You definitely need a BRIE, which is the best cheese for crackers. Feta doesn't work well on crackers, so forget that for this party. A creamy extra-sharp cheddar; a smoked Edam or Gouda; FRESH mozzarella; and a good Blue Cheese (for those that like it). Water crackers or mini melba rounds are the best way to eat food cheese. You might also want a platter of fruit with it. You could even "frost" gs to decorate the platters (dip little bunches into lightly beaten egg whites; then roll in granulated sugar & let them dry).....
